How can I make Turkey Meat which aren't rubbery?
One way to make more tender meat, no matter what meat you use, is instead of breadcrumbs, use freshly torn bread and soak in milk, wring the milk out and add the bread to the recipe. Breadcrumbs tend to combine with wet ingredients and bind too much, making it into a glue which gives you rubber , rather than a nice tender meat ball. Another common mistake when making meat and meatloaf, is over mixing. Just blend enough with your hands to combine, not squish everything in one big lump.This also makes for rubbery meat. I also have good results when I bake them, place the meat on a cookie sheet and pour over a can of chicken broth. It will simmer them in the oven and you will have moist as well as tender meatball.
